I’ve been with Chartwells Catering since 2013 and served as Catering director since 2014. In my time here, I manage the planning and execution of events and service settings. I take pride in serving our campus community. Growing the talent of our Catering staff is also one of the best things about what I do. I believe food is a key link to bringing together people from all walks of life. I love seeing how one of our events spurs communication and how it can also encourage learning about new foods and cultures.

I started to pursue a culinary career over 20 years ago when I was staring at a computer in an office cubicle. My idea of turning my love for food became a reality after achieving a Culinary Arts Degree from Pulaski Technical College and the Culinary Institute of New Orleans. My career has led me on a varied adventure through many different restaurants and landed me here in a position where I can create art everyday. I love being able to teach and mold our associates into outstanding culinary talent, and feel I still have the ability to learn something new every day.

Chef Mathew Belzano: Culinary Services Director

I think designing the perfect meal is the easiest way to deliver great customer service. When you can entice a customer’s palette making them feel the desire to take the time to come back and give their compliments then that is the ultimate customer and chef satisfaction. I have a degree in Culinary Arts and Hotel Management from Oxnard College and a degree in Accounting and Finance from Cal State Fullerton. These combined skills are invaluable in every aspect of our operations from developing new formats, purchasing and budgets to the culinary training of our associates.


Jack Ervin: Director of Operations

I fell hard for food early in my career. As a graduate of the California Culinary Academy, I’ve been able to apply that knowledge and interest in food trends to operations on our campus since 2001. I’m very proud of the evolution of our dining services into new destinations. I’m additionally proud of the people we’ve been able to attract, retain and grow into strong managers and culinary talent.

Greg Chaffin: Director, Union

I started with Chartwells at Northwestern Oklahoma State in 1996 and moved to U of A in 2012 as the Union late night manager. In 2015 I moved into the Union Director role. My love of food comes from my spending Summers with my Grandmother. I love that no two days are the same, and each day I have a chance to positively impact guests, and students.

I have over 25 years of experience in the food and hospitality industry. I believe that even though Chartwells is known as a food company, our true business is customer service. Because of our location, an extension of that would be education. I love that no two days are alike and that, in each one, we are given the opportunity to impact the positive growth of the students we serve.
